medium red bell pepper, diced
medium onion, diced
fresh parsley, chopped

1. Set a large non-stick sauté pan over medium-high heat and cook sausage slices for 8 minutes, flipping occasionally. Remove sausage from pan.
2. In the same pan, add pepper, onion, and garlic and sauté until tender, about 4 minutes.
3. Add chicken broth and 1 cup water and bring to a boil. Add rice and return the sausage to the pan and season with salt and pepper. Reduce heat to medium-low, cover with lid, and cook 12 minutes, or until liquid is absorbed and rice is tender.
4. Remove the pan from the heat and stir in the parsley, saving some for garnish if desired. Divide among four dishes.
