8 OZ | rigatoni pasta |
4 | sweet Italian sausages, casings removed |
3 CLOVES | garlic, sliced |
1 | shallot, sliced |
1 TSP | lemon juice |
1/2 BUNCH | rapini, trimmed, washed, stems removed |
1/4 CUP | chicken broth |
1/4 CUP | Parmesan cheese, grated |
From your pantry
1 TSP | vegetable oil |
1/4 TSP | red pepper flakes |
PINCH | each, salt and pepper |
Directions
1. Cook pasta according to package directions.
2. In a large non-stick pan heat 1 tsp of vegetable oil over medium heat.
3. Add sausage and sear evenly for 3-4 minutes, making sure to crumble the meat. Add garlic, shallots, red pepper flakes, salt, and pepper. Cook another 2-3 minutes and then drain fat from the pan.
4. Add the rigatoni and parmesan to pan and toss to coat. Divide evenly into four bowls and serve.
