Sriracha Grilled Lobster

PREP: 15 MIN | Cook: 5 min | SERVES: 4

6 frozen lobster tails
2 tbsp Longo's Roasted Garlic and Shallot Grapeseed Grilling Oil
1 tsp finely grated lime zest
1 tbsp lime juice
1 tbsp sriracha hot sauce (or to taste)
1 tbsp Longo's Pure Maple Syrup
1 tbsp Longo's Fresh Mint or Chives, finely chopped

Whisk together oil, lime zest, lime juice, hot sauce and maple syrup. Divide sauce mixture in half. Stir mint into one half; set aside remaining to glaze.

Using a sharp heavy knife, cut through underside of tails, leaving top shell mostly intact. Spread tails open like abook. Brush generously with sauce mixture.

Place on preheated greased grill over medium-high heat. Grill, cut-side down, without turning, for 4 to 5 minutes or until lobster is well-marked and no longer opaque. Remove from grill and brush with reserved mint sauce mixture. Serve with lime wedges.
