Total cooking time should be approximately 10 minutes per inch of thickness. barbecuing cook about 4 inches from the coals for about 5-6 minutes on each side or until flesh flakes easily when tested with a fork. baking allow 10-20 minutes at 450 f (232 c) for the 1st inch of thickness. Add 10 minutes per additional inch. Perfect poached and served perhaps with lightly sauteed diced tomatoes, garlic and onions.
