Flat Iron Kabobs

FLAT IRON KABOBS WITH GRILLED RAPINI AND RICOTTA & A HONEY-LEMON VINAIGRETTE
Grilled flat iron steak kabobs accompanied by grilled rapini and fresh creamy ricotta and finished with fresh lemon zest. This recipe is so versatile, you can cook it indoors as well as outdoors.

INGREDIENTS
1 lemon
1 pkg (15g) honey
1 pkg fresh thyme
1 red pepper
4 pods (60g) Longo's Miniagrette
4 garlic cloves
1 pkg (300g) flat-iron steak cubes
1 red onion
1 pkg rapini
1 pkg (100g) ricotta cheese
1 pkg oregano

WHAT YOU'LL NEED

Pepper
Knife
Bowls
Cutting board
Grilling tongs
Basting brush
Grill pan
Grater

Getting Started

Wash and dry all produce.

Preheat grill pan over medium-high heat on the stove.

Soak wooden skewers in water for 15 minutes; set aside.

Trim stems of rapini 2 inches from bottom. Cut red pepper in half and remove seeds; chop pepper into 1-inch cubes. Peel and chop onion into 1-inch cubes. Mince garlic. Zest lemon using a rasp or fine grater. Cut lemon in half, squeeze out juice and remove seeds. Remove leaves from 2 sprigs thyme and 2 sprigs oregano and finely chop.

In medium bowl, add thyme, oregano and 1/2 the garlic; stir in 2 minigrettes and a pinch each of salt and pepper. Add flat iron steak cubes to marinade and toss; set aside.

Alternately thread steak, pepper and onion onto soaked wooden skewers. Pour remaining marinade over kabobs.

Combine lemon zest, juice and remaining minigrettes in small bowl. Add honey and remaining garlic. Add salt and pepper to taste then stir. Set aside.

Place rapini on preheated grill pan for 2 minutes per side or until lightly charred and tender. Remove to cutting board and chop into 2-inch pieces; place in bowl.

Add the lemon honey vinaigrette and stir well to coat. Evenly divide rapini between 2 plates and crumble ricotta cheese over top; add salt and pepper to taste.

Grill the kabobs

Place kabobs on preheated grill pan for about 3 minutes per side, basting with any remaining marinade. (Cook to an internal temperature of 175°F/74°C)
