Cranberry Lemon Green Beans

1 1/2lb green beans, trimmed
2 tbsp Longo’s Essentials Country Churned Salted Butter
1 tbsp finely grated lemon zest
1/4 tsp each salt and pepper
1/3 cup crumbled feta cheese
2 tbsp finely chopped Longo’s Dried Cranberries
2 tbsp Longo’s Pine Nuts, toasted
Cook green beans in large pot of boiling, salted water for 5 minutes or until tender- crisp; drain and return to pot. Add butter, lemon zest, salt and pepper; toss to coat.
Transfer beans to serving bowl and sprinkle with feta cheese, dried cranberries and pine nuts.
Tips: Toast pine nuts in small skillet set over medium-low heat, stirring often, for 3 to 4 minutes or until golden. Plant-based eaters can omit feta cheese and use vegan butter.
