Holding the microplane in one hand, use moderate pressure and a downward motion to drag your citrus across its blades. The zest will gather in the grooves. This type of zest is best used anytime you want the zest to melt into the dish, like in batters or doughs.
Using a sharp knife, carefully cut into the skin and slide the knife around the fruit, between the zest and the pith. This produces large pieces of zest, best for garnishing cocktails or infusing oils and syrups. For finer zest, mince the strips.
Using moderate pressure, drag the sharp-edged side of the peeler down the fruit. These curlicues are suitable for cocktail garnishes and candied citrus decorations.
